The stages of production of Extra Virgin Olive Oil
Oil is a preserve of olives , the result of the transformation of a natural product so that it can be preserved over time. The process of producing oil , which has as its purpose the separation of the oily fraction of the olive drupes from the other solid and liquid components, consists of five phases: harvesting of the olives and transport to the mill; washing of the olives and milling; kneading of the olive paste; extraction of the oil ; storage of the product.
The olives , harvested with mechanical methods (by hand, with poles or poles, by spontaneous fall, with wooden or pneumatic combs, with shakers) are dropped onto nets placed on the ground under the treetops. Collected in perforated crates (so that the stratification of the fruit does not alter the fruit underneath), they are taken inside the mill, where, once inside, they are weighed, defoliated, washed and then left to dry.
