Thistle Honey
Thistle honey, from the pollen of the flowers of milk thistle , a plant with a spiny flower of white or purple color, placed at the top of a thin stem up to forty centimeters long; in some cases the plant develops and reaches considerable dimensions, up to a meter and a half.
This is a honey with a characteristic and very refined flavour . The colour is amber, with a light greenish reflection; however, crystallisation occurs not too long after (within a few months of harvesting), transforming the honey into a more compact paste with a lighter colour. This is a honey with a fine and rich aroma , with an important floral note, sweet and pleasant. The flavour goes hand in hand with this complex of aromas, and is very consistent on the palate, persisting for a long time with a sweet and characteristic flavour.
Thistle honey therapeutic properties : it is an important ally for the liver. It helps detoxify and stimulates liver activity by improving digestion and avoiding the feeling of tiredness and discomfort that occurs when you overdo it with food. Thistle honey is commonly known for its beneficial effects on the circulatory system : it is a good cardio-stimulator and facilitates blood circulation in those subjects who suffer from delicate problems of this kind.
