Evo oil Raw material - medium fruity

Materia Prima extra virgin olive oil is a medium fruity oil suitable for cooking in a variety of preparations (it is also a perfect oil for frying), which is produced in November, when the olive is in its medium ripening stage. We created it with the collaboration of great master chefs and it is aimed at restaurateurs who want to use an excellent product in the kitchen to dedicate 360° attention to their dishes, in a qualitative journey from the kitchen to the dining room. Cold-extracted from Sicilian and Apulian cultivars grown in our facilities, it is the result of careful work and the great experience of Coppini Arte Olearia who have created an extra virgin olive oil of supreme quality.

Used for cooking and to finish the dish, it was the official extra virgin olive oil of the world pizza championship, but also the cooking oil in the Identità Expo restaurant at Expo Milano.

Tasting Notes

An oil with a medium green fruitiness, with hints of freshly cut grass and tomato leaf. Balanced on the palate with light bitter and spicy notes.

Pairings

Materia Prima evo oil is ideal with risotto, caponata, mixed salad, tuna fillet, cereal and legume soups, red meats, meat carpaccio, grilled vegetables, crudités and excellent when tasted raw on bread. It goes well with perfection for preparing leavened products such as pizzas and focaccias.
