Coppini Arte Olearia celebrates 75 years at CIBUS with new projects

August 27, 2021 - Coppini Arte Olearia will participate in CIBUS 2021, the first post-Covid food fair in person.

On this occasion the company will present the new de'Coppini , an extra virgin olive oil that represents the maximum expression of the company's production.

"This extra virgin olive oil bears the name of our family, so we decided to make it our product of excellence, also to celebrate 75 years of activity of our company. We took advantage of this period to meet with our agronomists in Sicily and to work closely with the olive growers to achieve a result of the highest quality - explains Francesco Coppini, sales manager of the company".

“The olives, coming from identified plots of land, are hand-picked in their very first stage of ripening when they are still green. In this period the yield is certainly very low, but the polyphenols benefit from it – adds Coppini - As soon as they arrive at the mill, the olives are selected by hand on the mat, both to eliminate the leaves and to remove any damaged fruit or those that are more advanced in ripeness than we need

After that they are immediately sent for pressing, in order to maintain the integrity of the fruit as much as possible”.

The extraction takes place using a latest-generation decanter from Pieralisi, a leading company in the oil sector. The immediate transfer to the Opificio Verde in Parma takes place using temperature-controlled vehicles. Here the oil will be stored in tanks under nitrogen, to preserve its organoleptic qualities, and will then be bottled.

CIBUS will also feature a preview of the short film “ Anita and Americo, story of a bicycle ”, the project developed for Parma 2020 – city of culture, winner of the Imprese Creative Driven call, created by the Toro Association with the collaboration of the company's employees.
