For lovers of gin and ginger, an essential and aromatic drink that is simple to make and very effective, ideal as an aperitif during the holidays.
In the preparation of the Velvet gin and tonic we will infuse only the aromatic part of our Olive & Ginger seasoning , using the Fat Washing technique.
Fat Washing is a technique of flavoring alcohol with high-fat ingredients, such as ginger oil. After dissolving the fat in the alcohol, stirring it, and cooling it for a certain period of time, the fat is removed, leaving the flavor in the spirit

Procedure
Mix the desired seasoning with the gin in a ratio of 1 to 30 (about 3cl of oil for every liter of distillate). Shake and put in the freezer overnight. Finally, filter the fat, which in the meantime will have surfaced by freezing.
Compose the cocktail by combining the tonic with the gin infused with ginger oil, a few ice cubes and garnish with a slice of citrus and one of fresh ginger.
Using the Fat Washing technique you can donate not only the essence of our condiments with contemporary pressing but through the infusion it is possible to transfer the taste and the "silkiness" of the extra virgin olive oil, using for example an extra virgin olive oil with an intense fruitiness such as Rocca de'Rossi you will infuse the scents of the extra virgin olive oil to the chosen spirit.
