Let's talk about Cultivars and EVO oil

What are cultivars? Let's start with the definition.


Cultivar (often abbreviated to CV), in horticulture is the name used to indicate the agricultural varieties of a botanical species.


These are plants, fruits and vegetables in general, apparently similar; they are distinguishable by genetic characteristics that can be highlighted with DNA analysis.

In fact, our country boasts a heritage of over 400 cultivars that are an expression of different territories . Each variety has particular genetic characteristics. These characteristics make each cultivar more or less suitable for one environment compared to another; for example, there are varieties that resist the cold, others that prefer warm and dry places. It is therefore essential to select the right cultivar, taking into account the type of soil and the microclimate that hosts it, but at the same time the productivity, the size of the fruit, the yield of the oil and clearly its organoleptic and nutritional properties.


Our cultivars come from Abruzzo (Dritta), Puglia (Coratina and Ogliarola) and Sicily (Nocellara del Belice and Biancolilla). We guarantee the same organoleptic judgments of our extra virgin olive oil for each campaign: light, medium and intense fruitiness. To maintain the same fruitiness, we change the structure of the oils every year. For the same reason, we do not use the monocultivar, because if the campaign is negative, we prefer not to risk bottling unhealthy olives in order to guarantee the monocultivar.
