Creamed cod with mandarin oil

Creamed cod and cotechino. From these traditional dishes, Chef Enrico Bergonzi of the Al Vèdel restaurant has created his "Due Consistenze".

The cod is creamed with our Olive&Mandarino dressing to give the dish a sweetness that pairs well with the strictly artisanal cotechino and the spinach caramelized in Traminer.

Due consistenze - Baccalà mantecato all’olio al mandarino e cotechino

COD CREAMED WITH MANDARIN OIL

Ingredients for 4 people

400 g of desalted cod

0.4 dl milk

1 clove of garlic

chopped parsley

Olive & Mandarin Dressing

Procedure:

Cook the cod in a saucepan with the milk and garlic for 5 minutes. Let it cool and blend it with the parsley and mandarin oil until it becomes a frothy mixture.

SPINACH WITH TRAMINER

INGREDIENTS

250 g of previously boiled spinach

80 g granulated sugar

2 dl Gewurztraminer white wine

Corn starch

a few drops of lemon

Procedure:

Put the sugar in the pan until it caramelizes. Add the white wine and let it reduce. Thicken the sauce with the corn starch and a few drops of lemon. Put the spinach in the pan and let it flavor for a few seconds in the sauce.

COMPOSITION OF THE DISH

The last phase of composing the dish is the most delicate, but it will also give you the most satisfaction, once you see the result.

In addition to our creamed cod and the spinach already prepared previously, here's what you need:

- 400 Artisan Cotechino previously cooked and sliced

- 1 dl of brown veal stock

- Horseradish root

- Crispy vegetable wafers

In a pastry cutter, alternate the creamed cod with the slices of cotechino

Take the cotechino and stuff the slices, spread the sauce on the plate and add the spinach seasoned with caramel.

Garnish the thin oven-dried vegetables and grated horseradish with the crispy wafers.
