Oil extraction is an ancient art born in 1450 BC. It has evolved over the centuries thanks to artisans, engineers and inventors such as Leonardo da Vinci.

It is a device created for the pressing of olives and is an example of the mechanization of agricultural work. The upper horizontal lever curved to the right to be moved by the force of the horse is equipped with a counterweight on the left. In this way the toothed wheel turns and acts as a nut screw pushing the screw against the round bags, squeezing the olives contained inside.


In our oil museum we have collected some of the machines that have been used for the production of oil over the centuries.



Oil is a preserve of olives, the result of the transformation of a natural product so that it can be preserved over time. The production process of EVO oil, which has as its purpose the separation of the oily fraction of the olive drupes from the other solid and liquid components, consists of five phases: harvesting of the olives and transport to the mill; washing of the olives and milling ; kneading of the olive paste; extraction of the oil; storage of the product.
