HOW TO MAKE OIL ICE CREAM

How do you make oil ice cream? The process is very simple and quick. Start by separating the egg yolks from the egg whites. In a large enough container, beat the egg yolks with the sugar, add the Rocca de' Rossi Extra Virgin Olive Oil cold and incorporate, mixing delicately. Proceed with whipping the cream and incorporate it into the mixture, taking care to mix from top to bottom so that it does not deflate. Finally, incorporate the egg whites, whipped until stiff, always mixing delicately from top to bottom. Place the mixture in a closed container and let it cool in the freezer for at least 5 hours. Serve as a normal ice cream in cups that you can enrich with fruit or wafers.

For the preparation of the ice cream we have chosen an oil with an intense fruity flavour so that it can release all its aromatic components. If the flavour of the oil is too strong for you, you can opt for a light oil such as Terra Gentile . You can vary the flavour of the ice cream using the Olive & Lemon dressing or the seasoning Olives & Mandarin Marzuddu .
