Gingerbread without butter


Pan di Zenzero, or gingerbread, are classic Christmas cookies. They are usually made in the shape of a little man and decorated with icing or royal icing. Decorating oil cookies can be transformed into a magical moment to share with family or friends.
Our gingerbread cookies are butter-free cookies, made with Olive & Ginger and Olive & Mandarin seasonings. Our contemporary crushed seasonings, in addition to providing the fat part to the dough, will give the typical Christmas scents and flavors.

Ingredients

Per circa 20 biscotti:

Per la glassa reale:

  • 1 busta di zucchero a velo
  • 30 g di albumi
  • Qualche goccia di limone
  • (Facoltativo) colorante alimentare in gel

Procedure


Preparation:

Start by combining the flour, sugar, yeast and ground spices in a bowl (the amount varies according to taste). After mixing the dry ingredients, add the egg and incorporate it into the dough first with a fork and then with your hands. Bring the dough to the pastry board and work it until you get a smooth dough. Form a loaf and cover it with cling film. Transfer the dough to the refrigerator to firm up for at least 20 minutes. After the resting time, take the dough again, roll it out with a rolling pin on a floured pastry board to a thickness of about 1 cm. At this point, shape the cookies using Christmas cutters. Arrange the cookies on a baking sheet lined with baking paper and bake for 10 minutes at 180° in a preheated static oven. Once cooked, let them cool completely before decorating.


For icing or royal icing, beat the egg whites with a few drops of lemon. When the egg whites are stiff, gradually add the powdered sugar. Continue to work the icing with the whisk until the powdered sugar is completely blended and you obtain a smooth, lump-free icing. Add a few drops of food coloring to obtain multi-colored decorations. Decorate the cookies using a piping bag or a toothpick. Here, imagination is a must.
