Panettone is the symbol of Christmas. To wish you a happy holiday, we inaugurated the cycle of our Evoricette with a dish created by Chef Davide Censi , owner of the Trattoria Antichi Sapori in Parma, who presented us with his caramelized panettone, accompanied by an extra virgin olive oil ice cream.
For the ice cream, the Chef chose a lightly fruity extra virgin olive oil, which marries perfectly with the sweetness of the preparation and enhances the aromas and flavours of the panettone.

Procedure
Let's start by preparing the first mixture, mixing the starch with a little water. Separately boil the water and sugar and add to the starch mixture.
To prepare the second mixture, in a saucepan let the ingredients warm together (except the extra virgin olive oil). Add the first mixture based on starch and mix well. Add the extra virgin olive oil in a thin stream then emulsify with an immersion blender, to make the mixture smooth.
Freeze the mixture for a few hours and churn it to make it creamy.
