Yogurt and Mandarin Oil Pancakes

Pancakes are a typical American dessert, ideal for breakfast and very versatile. They are very easy to prepare and only require a few ingredients. A way to prepare a richer breakfast or a tasty snack.

There are various recipes to prepare them, in ours we decided to replace the butter with extra virgin olive oil, or rather with our marzuddu mandarin dressing, and to add yogurt to the mixture.

INGREDIENTS

2 eggs
    1 pot of citrus yogurt (125 g)
      2 tablespoons sugar
        2 tablespoons

          100 g of flour
            a glass of milk
              a teaspoon of baking powder

                PANCAKE RECIPE

                To prepare pancakes without butter, we start by breaking the eggs into a bowl, add the sugar, the mandarin seasoning, the jar of citrus yogurt. Mix all the ingredients with a whisk or a fork.

                Add the flour and yeast and a glass of milk (you can use the yogurt jar as a measure). Mix all the ingredients until you get a smooth mixture without lumps.

                In the meantime, grease a non-stick pan and heat it over low heat. Using a ladle, pour a little of the mixture into the pan, forming pancakes. Let them cook for about two minutes on each side; when bubbles form on the surface, it's time to turn them.

                Once ready, you can season your pancakes with fresh fruit, maple syrup, jams or chocolate cream.

                VARIANTS

                You can use the doses of this recipe and vary the flavors to your liking by changing the flavor of the oil used and the taste of the yogurt. Some combinations that we suggest are extra virgin olive oil and plain yogurt, for a simpler taste, or lemon oil and vanilla yogurt for a more elegant flavor.

                You can also make savory pancakes with natural yogurt and basil oil replacing the sugar with two pinches of salt. In this case you can accompany them with diced tomatoes, salmon or cold cuts.

                Ingredients

                (circa 6 pancake)

                • 2 uova
                • 1 vasetto di yogurt agli agrumi (125 g)
                • 2 cucchiai di zucchero
                • 2 cucchiai di Condimento Olive & Mandarino Marzuddu
                • 100 g di farina 00
                • 1 bicchiere di latte (misurate con il vasetto dello yogurt)
                • 1 cucchiaino di lievito per dolci

                Procedure

                1. Mescolate gli ingredienti liquidi. In una ciotola capiente rompete le uova, unite lo zucchero, il vasetto di yogurt e il condimento al mandarino. Amalgamate bene con una frusta fino a ottenere un composto omogeneo.

                2. Incorporate farina, lievito e latte. Aggiungete la farina setacciata e il lievito, versando gradualmente anche il latte. Continuate a mescolare fino a ottenere una pastella liscia e priva di grumi.

                3. Cuocete i pancake. Scaldate una padella antiaderente leggermente unta con olio extravergine. Versate un mestolo di impasto per ciascun pancake e cuocete a fuoco medio-basso per circa 2 minuti per lato. Girateli quando iniziano a formarsi delle bollicine in superficie.

                4. Servite. I pancake sono pronti per essere gustati. Potete accompagnarli con frutta fresca, confetture, miele, sciroppo d’acero o crema spalmabile.
